    Let Jim and Catherine, along with the crew of the Motor Yacht L’Elégance, welcome you to this once-in-a-lifetime "Millennium Fever Feast." Allow us to take you for a tour of international mouth-watering delights, and to marry these exotic flavors with specially selected wines and beverages. While you are eagerly anticipating being among the first in the United States to experience the beginning of a new century, your gastronomic tour will include the cuisine from several different places, including Hawaii, Russia and Canada… then hold tight, as we start the Millennium with a fiery display of desserts!!!!

Your first course will take you to the shores of Hawaii, as you start your tour on Mini Hawaiian Crab Cakes, breaded in tropical macadamia nuts swimming in a pool of tropical salsa. Match these with a colorful selection of Millennium Cocktails, as we gaze out at the setting sun, and recall the Hawaiian surfing era of the 60’s. Although this is the first stop on your tour, Hawaii is the last place to start any New Millennium Celebration.

Let us leave the warm shores of Hawaii to take you to the cold waters of Russia where the best Caviar is harvested. Your Chef, Ken will delicately serve the finest Beluga Caviar Russia has to offer, with roasted shallots in a French cream reduction, accompanied by "Toast Points" spread with artichoke and parmesan. Do you know what the Russians like to serve to accompany Caviar….??? For the less adventurous, may we suggest Moët et Chandon’s Dom Perignon Champagne…

On leaving Russia you will be taken to the Highlands of Canada where Captain Russell, while on vacation in the Alberta region, personally caught and smoked the Nova Lox you are about to dine on. Here, Ken will gently slice and serve it on a bed of confetti lettuce with tangy L’Elégance vinaigrette dressing. Alberta is currently waiting to start the New Millennium, only 4 hours behind our (island) time. To perfectly balance the intense flavors of the smoked salmon, allow us to offer you a deliciously decadent french Meursault white wine.

From Canada we head to the shores of Chile where you will dine on the delights of Grilled Chilean Sea Bass topped with caramelized oranges served with a Blood Orange Sabayon. May we suggest a crisp Chilean Sauvignon Blanc to accompany this regional fare. Chile, famous for its beautiful coastline will also be one of the last countries to join in the Millennium celebrations.

To cleanse your palette, Ken has prepared an Italian Melon Reduction Sorbet made with the tiniest and sweetest melons Italy has to offer.

From Italy we take you to the New Zealand countryside which was the first country to greet the New Millennium. Young tender racks of lamb are marinated in a mixture of herbs, then grilled and surrounded by a wild Mushroom Bordelaise Sauce accompanied by pan seared ratatouille. To accompany this delicious dish, we have a fine bottle of Château Clerc Milon 1992 Grand Cru Classé from Bordeaux, to offer you. It has been breathing for several hours-about as long as France, and its people, have been enjoying the New Year.

Onwards, to the farms of Idaho, which have been cultivating potatoes since the early settlers started their homesteads. Let us offer you a Roasted Potato Napoleon. This Potato dish, just as Napoleon did, appears to have suffered some sort of catastrophe. Could this be the first of the Y2K problems?? A Millennium Bug??

Let the New Millennium sparkle into the night with "Flaming Baked Alaskas" served alongside Hungarian Caramelized Bananas and a flaming Rum and Raisin Sauce. To accompany this dish, may we suggest a dessert wine, such as a Sauternes, from France; or perhaps a Vin Santo, from Italy.

As we offer "Millennium-Coffee"-and Dom Perignon, please contemplate the arrival of the year 2000, with a ‘Positive Thought’ Fortune cookie.
