Avocado and lime tart

crumb crusts
2 cups gingersnaps
1/2 cup butter
filling
1 each avocado
1 tablespoon lime juice
3/4 cup confectioner's sugar
1 1/2 tablespoons gelatin
2 tablespoons water
2/3 cup heavy cream
2 each egg whites
1 pinch salt

Mix the cookie crumbs and butter together and use to line the bottom and sides of an 8-inch loose-bottom tart pan. Bake in a preheated 375 degree oven for 15 minutes. Leave to go cool.

Puree the avocado, lime juice and 1/2 the sugar in a blender until smooth. Dissolve the gelatin in water and add to the puree. Fold the puree into the whipped cream
Stiffly beat the egg whites with a pinch of salt, then beat in the remaining sugar.

Fold the mixture into the avocado mixture and pour into the tart shell. Chill for 4 hours.
