Boysenberry
soup with
Vanilla Ice cream and Peaches

Soup
3 pints boysenberries
3/4 cup water
3 tablespoons sugar
1/2 teaspoon kirsch
6 each peaches
6 tablespoons sugar
Garnish
1 1/2 pints vanilla ice cream
5 sprigs mint
1. Make the soup: In non corroding medium saucepan, heat the berries with the water and sugar until the sugar is dissolved. Remove from the heat and strain through a fine sieve into a bowl, pressing with the blade of a spoon to remove seeds. Add additional sugar, if necessary, then add the kirsch to combine. Chill thoroughly, covered with plastic wrap.
2. In a bowl, toss the peach slices with the sugar, sweetening them to taste.
3. Divide the cold soup among the soup plates and place a scoop of vanilla ice cream in the center of each. Garnish with a mint sprig. Surround with the sliced peaches and serve immediately with a crisp cookie.
