Macadamia Nut Biscotti

1 cup macadamia nuts
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons butter
6 tablespoons sugar
1 each large egg
1/4 teaspoon vanilla
Pre Heat oven to 350 degrees. Toast macadamia nuts until light brown about 10 minutes. Set aside and let cool.
Sift together flour, baking powder, and salt.
In a food processed, coarsely grind half of the nuts with the flour mixture.
Cream butter and sugar until light and fluffy. Add the egg and mix until incorporated. Stir in the vanilla extract and the
ground nuts. Add the ground nut mixture.
On a lightly floured board, divide the dough in half. Roll each half into a log 12 inches long. Place the logs on a baking sheet lined with parchment paper. Bake until golden brown in color, about 30 minutes. Let cool.
Decrease the oven temperature to 300 degrees.
Slice the logs at a slightly diagonal into 3/4 inch slices. Place them cut side up on the baking sheet. Bake until firm, about 15 minutes.
These biscotti will last for several days. Store in an airtight container at room temperature.
