Gooseberry and
Elder Flower Sorbets

12 each elder flower heads
2 1/2 cups water
1/2 cup sugar
2/3 cup water
1 tablespoon lemon juice
garnish elderberry flowers
Cover the elder flower heads with boiling water and leave to infuse for 1 hour, then strain through cheesecloth. Place sugar and remaining water in saucepan and dissolve over gentle heat. Add the gooseberries and bring to a boil for 5 minutes, then cool and puree, pass through strainer.
Add elder flower water and lemon juice and freeze in ice-cream machine.

NOTES : Never wash elder berries. If unavailable use 3 tablespoons China tea and a little green food coloring but only infuse for 20 minutes,
